Ever since I did my detox two months ago, I have been eating less meat. I love meat. I truly love the taste of it but I realized while detoxing that I felt lighter and overall better when I ate less of it.
Since I’m married to a big meat eater and what to keep things easy, I have been saving dinner to enjoy roasted turkey or a big juicy hamburger. My lunch options is where I have been skipping the meat and eating more plant based foods. I am loving it. But I was starting to get bored with black beans which is my go too choice of protein. Thankfully, I dug into my recipe archive and re-discovered my vegan chickpea sandwich spread.
Oh, after remaking this, I don’t know how I ever forgot about it? But it’s back. This recipe won’t be forgotten again. Luckily for you, I’m going to share this simple, easy, dairy-free and vegan recipe.

Vegan Chickpea Salad Sandwich Recipe
I actually eat this delightful chickpea salad sandwich spread on top of a mound of spring mix greens. But it tastes awesome on a toasted bun. 🙂 It’s also prettier to photograph on a bun.
Creamy, sweet, crunchy and a hint of garlic is what your mouth will be savoring when you make this chickpea salad sandwich. My almost 2 year old son, won’t have anything to do with tuna salad, but he devours this vegan chickpea salad sandwich.
Here’s the recipe. It’s so easy. Don’t skip out on the fresh dill unless of course you don’t like dill than leave it out. 😉
