Fall is my favorite. I really miss seeing all the Fall colors of MI this year. We do get some color change here in the Bay area but it’s very little compared to MI. I am thankful for cooler nights and mornings. We are finally making use of our sweatshirts and fleeces again.
Another Fall aspect I miss about MI are their apples. They have the BEST apples. The apples are especially rich and flavorful this time of year. I don’t know why but it’s hard to find a great tasting apple here. Last week, I bought a dozen apples, almost positive that I hit another home run. They smelled great and they looked beautiful but unfortunately their sweetness was already dissipating. As the apples sat day after day, I knew that I had to use them before I ended up throwing them out.
I wanted something fast and healthy especially with Halloween around the corner. Turns out these apples were perfect for my Healthy Crockpot Apple Butter recipe.
This apple butter is creamy in texture. While my kids love eating it like apple sauce, I love the sweet cinnamon rich flavor best on my morning oatmeal.
The best part about this recipe is that it cooks itself. It took me a total of 10 minutes to prepare and then I literally threw everything into the crockpot to simmer. I love having recipes that are healthy and tasty but don’t keep me in the kitchen.
