Have you ever needed to entertain your kids? Here in Michigan our winters are not for the faint of heart. Between the amount of snow and frigid temps, we welcome the idea of staying indoors if possible. However, that doesn’t mean we don’t get stir crazy. After the fourth day of being cooped up indoors, even my toddler was getting restless.
We were so desperate to get out of the house that we actually brought the snow indoors. Here’s a picture of Emma playing with snow. She enjoyed that snow for a good 30 minutes, which in toddler time is like a few hours. We both had so much fun! She got to play in the snow and I got to stay warm. A clear win/win for us both!
After the snow melted, we needed our next activity for the day. Emma loves baking any chance she gets. I was craving oatmeal but I didn’t want it in a bowl. I needed cookies. We needed something that was easy, healthy and quick to make. Immediately, my mind went to the traditional oatmeal raisin cookies. Not surprisingly, I couldn’t seem to find something that was on the healthier side so after looking at several recipes I came up with this recipe.
These cookies almost didn’t get baked. When I went to turn on my oven, nothing happened. For a two year old and a pregnant lady, there’s few things more disheartening than not being able to eat the cookies you worked so hard to make. Thankfully, after the third attempt, the oven did heat up. I didn’t have any problems after that so I’m guessing that it was all the consecutive cold days that kept our oven from heating up right away. 😉

These gluten free oatmeal raisin cookies were a hit. We even ate some for breakfast the next day. This recipe is a new staple in our house. 🙂 Soft and chewy they are a great afternoon snack or special treat for your lunch.
