Halloween is almost here. There’s a ton of excitement at our house. Emma, who is almost four, remembers last year and keeps asking, “Mom, is it Halloween yet?” Almost, sweetie pie.
Last year, was the first year I went trick or treating and didn’t have to wear a coat. It was awesome! Every Halloween in MI it either rains or snows. Growing up if the weather was super bad, my parents would stay in the car and drive slowly down the street following us. The ongoing joke was that we all spent so much time planning out our Halloween costumes only to have it invisible under a heavy winter jacket. LOL.
I’m still figuring out Halloween costumes for this year, but I’ve got our healthy gluten and dairy-free Halloween treat perfected. These adorable Chocolate Frankenstein Rice Cakes are the prefect solution to offering a gluten, dairy-free snack while keeping any parent’s sanity from spiraling out of control.
This recipe came after scouring Pinterest for hours for a healthy sweet gluten and dairy-free Halloween treat. I just couldn’t find one. I saw all the fruit recipes but I wanted something that had chocolate (without heaps of sugar) in it. Since I couldn’t find it then I knew I had to make it. This was so challenging for me. I love healthy food that tastes good but I don’t naturally think of recipes that are cutesy. My brain just doesn’t go there. I like recipes to be practical, simple and not too costly. I also didn’t want to have an artificial food dyes.
Just when I was ready to have a meltdown in the grocery store, ask my husband, he was there. I came across these fun Rice Thin Stackers. A box of 24 rice cakes was $2.50. I grabbed the box with some vegan chocolate chips and decided to just mull over the idea for a week.
You can imagine my excitement when my idea for these Chocolate Frankenstein Rice Cakes came together. Cute? Check. Health? Check. Sweet? Check. Chocolatey? Check. Easy to make. Double check.
These Chocolate Frankenstein rice cakes are sweet, salty, crunchy and fun to eat. My kids were picking the face off and laughing hysterically. It was a good reminder to me that fun food is important too. Here’s my son clearly enjoying every bite while rockin the perfect chocolate mustache and goatee.
I also love that this recipe was budget friendly. Since most of the ingredients don’t require a large amount, it’s definitely worth shopping at a store that carries food with a bulk bin section to keep cost down. Okay, here’s the fabulous recipe.
